Monday are the toughest of all days in a week. Here is easy, vegan and healthy homemade mac and cheese to get over Monday blues. Let us take one step towards sustainability right from our lunch/dinner plates. 

Ingredients

  • 1 Cup of Macaroni or any similar pasta shape 
  • ¼ Cup of Plant Based Milk 
  • 4 tbsp. of Nutritional Yeast (add more if needed) 
  • 1 tbsp. Paprika 
  • 1 tbsp. Garlic Powder 
  • 1 tbsp. cornstarch 
  • Pinch of Salt 
  • Pinch of Pepper 

 

  • Optional 
  • 1 tbsp. Tapioca Starch (gives the sauce a “cheese like” texture) 
  • 1 tbsp. Chili Flakes 


Instructions

  •  Cook pasta according to package directions. 
  • While pasta is cooking, in a bowl add in the starches, spices and plant-based milk. 
  • Drain the water from the pasta and add in the “cheese sauce” mixture. 
  • Cook the sauce till it thickens up and serve. 

Additional Comments 

 

This vegan mac and cheese recipe is also perfect for meal preparation as you can store the “cheese” powder in a container and use when ready.
